Seal it good
Oxidation of your matcha leads to less nutrient and flavorful matcha. Make sure the container you keep it in is airtight - similar to what you would store your coffee beans in. Keep the light out
While it can be visually appealing to store your matcha in the open for your customers to see, exposing your matcha to light in a see-through glass container will actually diminish that beautiful green color. Store your matcha in an opaque container to prevent light damage.
It can’t take the heat, get it out of the kitchen
Humidity and warmth lead to stale and metallic tasting matcha. To avoid this, store your matcha in a cool place like a closet or basement. Keep away from burners or ovens. While the fridge is a great place to store, make sure your matcha is tightly sealed, so it doesn't absorb other smells in your fridge.
